Does anyone have a general observation or even better data backed opinions on how prices on top 2/3 fav's generally move once in play, not including winners? Is it different for sprint and jumps?
For example I've noticed than in jumps racing the prices on top 3 fav often fall 5-10% lower than sp but not so sure on 5f race.
I know anything can happen in a race but in general what do prices do?

Horse racing can be random at the best of times, so it is not easy to say that on X amout of 5f races, the favourite did this but your best option, would be to create an account of Timeform and go through results on there.
One observation for 5f races is that a good start is critical i.e. if the fav breaks badly from the stalls then that would have an adverse effect on the price.
