When placing bets via the In-Play Trader window there is no blue cog icon to uncross, instead 'Global Settings' are always enabled, so you'll be able to initiate the placing of a back or lay bet on a runner and automatically have it offset the bet with greening etc by the software which increases the chances of a successful trade during volatile In-play markets
If you do not wish to use any Global Settings when betting via the In-Play trader ensure you have none of them selected on the left side of the main ribbon before placing any bets.
